Shopify often automatically generates a collection at the URL = /all. To hide products from this collection, create a collection named "All" with the options selected in the image below:

Manual Collections:

For collections you create manually, simply remove the products you don't want to display.

Auto Collections:

Auto collections are created based on the rules you set. To hide products, use the rule:
Product type - Does not contain - (Insert type)


Limitation with Auto Collections:
Note: Products can't be hidden from auto collections that use the 'any condition' filter due to a Shopify limitation.
